Chocolate Curls
Chocolate curls, though they have a flavor of their own, are pure decoration. Use them on cakes, creams and custards; gain an effect of elegance by arranging them at intervals around the edge of a dish or cake. Use just a few of them to top whipped cream on pies and refrigerator cakes. Use them for contrast with fruits-strawberries, raspberries, peaches.
To make chocolate curls:
Shave cold, hard chocolate in long strokes with a vegetable parer or with the broad grating blade of a stand-up grater. Handle the resulting curls gently for they break easily. Their length and curliness is what gives the wanted effect.
Chocolate may also be used to make special decorations such as Ivy Leaves for cakes and desserts.
