Glazed Puff Pastry Apple Tarts

 


Ingredients

1 sheet frozen puff pastry, thawed
2 Golden Delicious apples (about 1 pound)
3 tablespoons granulated sugar
3 tablespoons unsalted butter, melted
2 tablespoons apricot jam, warmed
Vanilla ice cream, for serving


Preparation

1. Line 2 baking sheets with parchment paper. Roll pastry on lightly floured work surface to a 13" square. Using a 6" plate or tart pan insert as guide, cut out four 6" rounds. Place 2 rounds on each prepared baking sheet. Cover with plastic wrap and refrigerate for at least 30 minutes.

2. Position rack in center of oven and preheat to 425ºF. Wash and peel apples. Cut in half and core using melon baller or spoon. Slice each apple-half crosswise into very thin slices, keeping the apple half in tact. Place an apple half on each pastry round, pressing lightly down to fan slices a bit. Sprinkle each apple with 2 teaspoons sugar. Drizzle with melted butter.

3. Bake tarts in preheated oven until pastry is golden and apples are tender, about 20 minutes. Cool slightly then brush with melted apricot jam. Serve warm or at room temperature with vanilla ice cream, if desired.
