Lime Mousse


Ingredients

5 ripe Haas avocados, peeled, pitted and cut into chunks
1/2 cup freshly squeezed lime juice
1/4 cup finely grated lime zest, packed
1/4 cup agave nectar or honey*
2 tablespoons coconut butter** (optional)
1/2 vanilla bean or 1 teaspoon vanilla extract
1/2 teaspoon sea salt
10 (1-gram) packets stevia extract (or to taste)***
* Agave nectar is a natural fructose sweetener extracted from the agave plant. It is available at health food stores or by mail from  www.veganessentials.com

**Also known as coconut oil, coconut butter provides body to the mousse, but it can be omitted. If you do add it to the mousse, use only high-quality, cold-pressed coconut butter - one that has either no flavor or a fresh coconut flavor. Coconut butter is available at health food stores and through www.rawfood.com.

***Stevia is an all-natural sweetener sold as a supplement in health food stores and by mail through www.veganessentials.com


Preparation


1. Place all ingredients except stevia extract in bowl of food processor and process until smooth. Add 8 packets of stevia and process until blended. Taste mousse, and add remaining stevia if you think it should be sweeter.

2. Spoon mousse into 4 martini or wine glasses, dividing it evenly. Cover surface of each mousse with plastic wrap and refrigerate for at least 2 hours before serving.
