Schlosserkuchen
1 pound largest prunes
1 cup flour
2 cups dry white wine
1 pinch salt
1 cup blanched almonds
1 cup grated sweet chocolate
Vegatable oil for frying
Put prunes in a deep bowl, cover with white wine and soak overnight. Drain in the morning, reserving the wine. Cover prunes with water. Cook gently until just tender. Drain. Remove pits carefully. Insert a whole almond in each prune. Chill.
Make a batter of the flour and 1 cup of the reserved wine. (Add more wine if necessary to make 1 cup.) Add pinch of salt. Beat batter until smooth. Heat vegetable oil to 390 degrees F. for frying. Dip prunes in batter to coat them evenly. Fry a few at a time until crisp and golden brown. Drain on paper. Wile still hot, roll in the grated chocolate to coat them evenly. Serve immediately. serves 6-8.
