As a small child, Ken Kossoudji began assisting his parents and grandparents in their kitchens. His grandparents were both chefs who passed along their passion for the culinary arts. His first chocolates were made alongside his father, a chocolatier, who was the inspiration and catalyst for Dorado Chocolates. During the last 15 years, Ken travelled the globe in search of the finest chocolates, ingredients, foods, wines, and desserts. As Ken tried the best from dozens of countries he began formulating recipes. These experiences are translated into an ever evolving series of chocolates sure to put a smile on your face, no matter your chocolate penchant. Ken combines these experiences with 75 years of family confectionery expertise and his professional training at Paris' top culinary school with France's most honored craftsman (M.O.F). These experiences are translated into a unique and broad range of confections. They suit the tastes from the most discriminating chocophile to the traditionalist who loves American-style classics. 

Dorado's line -D was created to provide a truly inspired chocolate experience with unique tastes, textures, and presentations using Old World Techniques. Our Signature -D ingredients are exclusively the finest from around the globe. The most complex couverture chocolates from Europe and Venezuela, whole vanilla beans from Tahiti, Lavender honey from France's lavender fields, and the freshest herbs from California's finest her growers, fresh cream and butter. Selections from D have up to five different chocolates incorporated to ensure each piece has the perfect flavor profile.  

American Classics are made using premium grade American style chocolate and other traditional ingredients like cashews, almonds, caramel, marshmallows, cherries, cream and sugar. These ingredients include the star of American Classics - Almond Butter Crunch Toffee, hand-rolled truffles like Kahlua, Tiramisu, and Cappuccino, nut clusters, cherry cordials, a vanilla caramel.

A 2005 study based at Tufts University in Medford, MA found that dark chocolate actually helps to lower blood pressure. In a controlled experiment comparing 20 different people, researchers found that dark chocolate was a significant factor in lowering blood pressure, while white chocolate was not. The key ingredient thought to cause this phenomenon is flavonoids.

Flavonoids, also found in wine are types of pigments that are water-soluble and created by plants of many varieties. There are thousands of different flavanoids. Plants use flavonoids in the process of photosynthesis.

How the human body actually uses and/or processes flavonoids is still not determined but they have been linked to good health in many areas - particularly blood circulation.
