EatpastryEatpastry is a Greener approach to fanciful chocolates and cookies. By combining French and Raw cooking techniques we aim to push the boundaries as to how “pastry” is perceived; hence the name Eatpastry where traditional pastry is virtually non-existent. At Eatpastry we enjoy eating foods that nourish our bodies and make us feel energized. We know pastry doesn’t have to be something that creates a lull in our days, rather, it can become something to inspire and elate us. We have created a line of organic and vegan products based on this belief. We want our customers to get the same feeling of nourishment from our products that we do.
As owners and creators of Eatpastry we are dedicated experimenters with contrasting, yet complimenting palates. Being classically trained in French pastry has generated a strong basis for growth in many directions. We have always been drawn to the unusual and creative side of cooking and baking. We found ourselves rooting through New York City together for rare, unique cuisine, and subsequently came across raw fare. Upon graduating from the French Culinary Institute, we began practicing Raw techniques on our own, expanding our knowledge of ingredients and their dynamic potential.
Experimenting in the kitchen together excites and intrigues us. As we embark on a journey into a new realm of pastry, our perspective on what the word “pastry” really means broadens; generating creativity and ingenuity.
Eatpastry was ‘born’ in November of 2007 as a Green company. We focus on natural, organic, wholesome ingredients and are dedicated to formulating inventive confections in a responsible, environmentally friendly manner. We hope to promote a healthy lifestyle that encourages experimentation and enjoyment. Good things, great ingredients, and healthy living can taste and feel terrific.

A 2005 study based at Tufts University in Medford, MA found that dark chocolate actually helps to lower blood pressure. In a controlled experiment comparing 20 different people, researchers found that dark chocolate was a significant factor in lowering blood pressure, while white chocolate was not. The key ingredient thought to cause this phenomenon is flavonoids.

Flavonoids, also found in wine are types of pigments that are water-soluble and created by plants of many varieties. There are thousands of different flavanoids. Plants use flavonoids in the process of photosynthesis.

How the human body actually uses and/or processes flavonoids is still not determined but they have been linked to good health in many areas - particularly blood circulation.

If you are a science buff, then you'll be interested to know that flavonoids are polyphenolic compounds containing 15 carbon atoms, two benzene rings joined by a linear three carbon chain.
