With partner Stan Weightman, Jr., Valerie Gordon launched the Los Angeles company in July 2004, concentrating on six flavors of toffees. The delicately crunchy centers are flavored with ingredients such as dried mint, organic hazelnuts from Eugene, Oregon’s Trufflebert Farm and thin stalks of crystallized ginger, and then hand-dipped in Valhrona bittersweet or milk chocolate. The candies became Valerie Confections’ instant signature, and critics instantly embraced them.

Valerie Confections “takes toffee to another level,” wrote Los Angeles Times food writer Leslie Brenner, adding, “The classic toffee is the best rendition we’ve ever tasted.” The opinion was echoed by House & Garden Food Editor Lora Zarubin, who said “The artisanal toffee of Valerie Confections is the best I have ever tasted. There were six flavors and each seems better than the one before.” Valerie has also been named one of America's Top 10 Chocolate Companies by Saveur Magazine.

Devoted to the principles of the Slow Food Movement, Gordon and Weightman hand make all the assortments in small batches working with a close-knit group of specially-trained candy makers. Independent farmers and small, local distributors supply the freshest and best ingredients. Their packaging is as elegant and beautiful as their chocolates. Their signature look is clean and striking: an embossed ivory box with chocolate brown grosgrain ribbon. Indeed, the boxes are an extension of the hand-touched experience with the contents label showing the expiration date carefully jotted by hand.

A 2005 study based at Tufts University in Medford, MA found that dark chocolate actually helps to lower blood pressure. In a controlled experiment comparing 20 different people, researchers found that dark chocolate was a significant factor in lowering blood pressure, while white chocolate was not.
