About Coco's Chocolate Cafe

Coco's Chocolate Café opened in the heart of The Highlands in Louisville, Kentucky in 2007. Owner and chocolatier Fred Moore trained at Ecole Chocolate out of Vancouver, British Columbia. He then trained with master chocolatiers including Danielo Vestri, Simone deCastro, and Paul DeBondt in and around Florence, Italy. Fred received the 2009 Best of Louisville award for "Best Chocolate Fix" by Louisville Magazine and has received numerous write-ups in local papers.

At Coco's all the chocolates are made using high quality couverture such as El Rey and Valrhona lines. We do not use preservatives, making small batches using mostly organic and many local ingredients. We have traditional selections like milk and dark turtles to exotic ones like a haberno and Serrano green chilie infused truffle called Chocolate Fire. We have our own signature chocolate bar, "Coco's Chocolate Bar" using Certified Fairtrade and Organic cacao (chocolate) beans. The 73% Dark Chocolate bar use organic coconut palm sugar, a low glycemic index sweetener appealing to diabetics, and certified organic cane sugar .
