In the United States praline candy is associated with the Creole cooking of Louisiana. Pralines originated in France where they were first made with almonds. When pralines were originally made in Louisiana, the pecan became the nut of choice due to their widespread availability.
Pralines were named after the French soldier, diplomat and industrialist Marshal du Plessis-Praslin. Legend has it that the notorious ladies man asked his chef to develop a seductively, sweet confection to entice the ladies. Marshal would mark the packages with his name before he presented it to a lady friend. Hence, the "praline" was born.
In Louisiana and Mississippi you will find the most common pronunciation as "praw-leen", while in Georgia and Texas the folks prefer "pray-leen".
