The Ingredients: Cocoa, cane sugar, cocoa butter. Tasting Notes: Very close to what chocolate should taste like...namely chocolate and nothing else. Aroma: crusted caramel with spicy fern, humus and a strong leather backing. Texture: muddy for good rear molar chew. Flavour: chocolate tannins thunder across the palate to balance acidic 'ground cherry' with a brief passing of red currant then pain au chocolat w/chestnut puree.
Coppeneur Chocolate
In 2006 Coppeneur became one of only a handful of chocolate makers who create premium single plantation and premium single origin chocolate. Coppeneur purchases cocoa beans directly from the farmer. This close relationship ensures Coppeneur visits the plantations, allowing for inspection of the beans, cultivation methods, fermentation/drying techniques and working conditions of the employees.
