Apple Bonbon
2 pounds tart cooking apples
2 tablespoons water
2/3 cup sugar
1/2 cup heavy cream
1 tablespoon powdered sugar
3 ounces grated bitter chocolate
Peel, core and slice the apples. Combine them in a heavy saucepan with water and cook, covered, over low heat until just tender. Add sugar and cook until the sugar is melted. Press through a sieve into a serving dish or casserole. Cool, then chll. Whip ream and sweeten with the powdered sugar. Spread over apples and top with the grated chocolate. Keep in the refrigerator until needed. Serves 4.
