Ingredients
1 cup corn oil
11/2 cups firmly packed brown sugar
1/4 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
1/2 teaspoon salt
3 cups all-purpose flour (or more, if necessary)
1/4 teaspoon baking soda
2 teaspoons baking powder
11/4 cups semisweet chocolate morsels
1 egg, whisked for eggwash
Granulated sugar for dusting


Preparation

1. Position rack in center of oven and preheat to 325°F. Line a large baking sheet or two smaller ones with parchment paper and set aside.

2. In a large bowl, blend oil and sugars, then eggs, vanilla, salt, flour, baking powder and soda to make a thick batter. Fold in chocolate morsels (using your hands if  batter is too stiff). Let dough rest ten minutes.

3. If batter is too soft, add extra flour to achieve a stiff consistency. Flour a work surface liberally. Divide dough into 14 sections and roll each into a log about 6" to 8" long and 1" wide or round. Place on prepared baking sheet. Whisk egg and brush each cookie with eggwash and then dust with sugar.

4. Bake until hard and golden brown, 30-40 minutes. Let cool on a wire rack.
