To Grate Chocolate
Have chocolate cold and firm and the grater dry. Use a regular tinware grater, or an electric blender flicked on for a few seconds; or a mouli grater- a little French gadget procurable at any shop dealing in specialty kitchenwares.
Use grated chocolate (sweet, semisweet or biitter, as desired) over frosted cakes, creams, pies and puddings; or use it to give a special kind of finish as with fritters.
